When it comes to comfort food, meatloaf is a classic that comes to mind and never goes out of style. My meatloaf recipe combines lean beef, bright vegetables, fresh herbs, and a simple glaze that has just the right touch of sweetness. Whether you’re making it for a family dinner or meal prepping for the week, this is the only meatloaf recipe you’ll ever need!

Ingredients

  • For the Meatloaf:
  • 1 lb lean ground beef (93% lean 7% fat)

  • 1 packet Lipton Onion Soup Mix or use my Homemade Onion Soup Mix recipe

  • 1 teaspoon Worcestershire sauce

  • 2 teaspoons ketchup

  • 1 egg

  • ¼ cup milk

  • 5 butter crackers, crushed (like RITZ)

  • ½ cup mixed bell peppers, finely diced

  • 3 shoots green onion, finely chopped

  • ¼ cup white onion, finely diced

  • ½ teaspoon Italian seasoning

  • Cooking oil for baking dish

  • For the Glaze:
  • ⅓ cup ketchup

  • 1 tablespoon brown sugar

  • 1 teaspoon Worcestershire sauce

Directions

  • Preheat the oven to 350°F/180°C.
  • In a large bowl, combine the ground beef, onion soup mix, Worcestershire sauce ketchup, egg, milk, crushed crackers, bell peppers, green onions, white onion, and Italian seasoning. Mix until well combined.
  • Shape the mixture into a loaf and place it in a greased baking dish.
  • Bake for 45 minutes.
  • Meanwhile, prepare the glaze by mixing the ketchup, brown sugar and Worcestershire sauce.
  • After 45 minutes, remove the meatloaf from the oven and spread the glaze evenly on top.
  • Return to the oven and bake for an additional 5 minutes.
  • Let the meatloaf rest for 10 minutes before slicing. Serve and enjoy!

  • My homemade onion soup mix is an easy 1:1 ratio for a portion size of an envelope of Lipton onion soup.
